This wine sees the fruit crushed instead of being pressed on the skins. Some juice is left to ferment to dryness on the skins. That portion is fermented in open bins and cap plunged. The rest of the juice is fermented in old oak without skin contact and then blended back together. The result is stunningly fresh for a skin contact wine.
